Pirate & Pixie Birthday Party

My plan was to have this post up two weeks ago... But if you follow me on social media, you know that we just bought a house (WOO HOO!), but we had two weeks to be out of our rental and move and clean everything (Boo!!).

This year for the girl's birthday I really wanted to keep it simple, unlike THIS one...or THIS one...or THIS one...

But I have this problem where I like to plan parties for little kids who won't remember it and spend a lot of money and make it cute...I blame pinterest. So this year I halved-it. I did some cute decor, a few games, but I still kept it simple and had the party at the park and let the kids run wild on the play ground.

I have to say, it felt good to take it easy and not put TOO much stress into it! I think next year will be even more relaxed!

After all...I should save my stress (and money) for the three weddings I'll have to plan in the years down the road right??

The girls really wanted a Tinkerbell Party this year, but they have a lot of boy friends and I figured fairy wings and wands weren't really up their ally. So we changed it to Pirate and Pixie! I loved this theme so much, you really could have so much fun with it!

Simple Top Ramen

Today I held a (rather large) clump of thin dirty blond hair in my hand.

One child screaming with her hands on her head, and the other child grinning from ear to ear, doing some sort of twirl victory dance.

As I bent down to scold said dancing child, her little two year old mouth looked at me and said, "Yeave me ayone!"

Then my 4 year old removed her hands from her poor scalp that was probably burning, and screamed, "MY SECOND NAME IS ELSA, QUEEN OF THE QUEEN!"...Followed by a twirl of her gown and loud stomps down the hallway.

"YEAVE ME AYONE."

"NO! MY NAME IS ELSA"

"GO AYAY!"

"YOU CAN'T TELL ELSA WHAT TO DO!"

"AYAYALDLF LSKDJFY!!!!"

Push, Shove, Twirl, Stomp, and Victory Dance...In that order.

I couldn't figure out whether to talk to Elsa or Gia, and quite frankly I was worried the two year old will pull my hair. So I did what any desperate mom would do...

I drank.

Ice water. It calms me guys. Then I said a prayer.

For sanity, for comfort, and for strength.

And then in that moment, both my girls came and sat on my lap and as clear as day I heard, "They love you so much."

Did they stop fighting after that? No. I swear my oldest was running around saying "Son of a Fish!"

Did I feel like a complete failure? No. Despite the chaos and drama, I felt loved,  I knew they felt loved and loved each other as well.

I also knew that someone had taught my daughter to say, "Son of a fish!"...

Next step:

Comfort Food.


Top Ramen

(Serving size 8 cups)

I will be completely honest and say as a child I LOVED opening a package of top ramen, sprinkling the 'seasoning' packet on top of the dried pasta, and eating as is. I can still taste it! This is a spin off of that ever so popular childhood favorite. This is a vegetarian version, but you can definitely add in your favorite ingredients. Switch up the broths, sautee some diced veggies with the onions, etc.

Ingredients

  • 2 TB. sesame oil, or olive oil

  • 1/4 c. minced onion

  • 3 cloves garlic minced

  • 2 tsp. freshly grated ginger

  • (Opt: Minced carrots)

  • 8 cups vegetable broth

  • 2 cups water

  • 12 oz. Chinese Noodles

  • 4 tsp. ground celery seed

  • 4-5 TB. fresh chopped chives

  • salt/pepper

  • optional: red pepper flakes, soy sauce, hot sauce, etc.)

Instructions

  1. In a large saucepan, add oil and heat up. Then add minced onion, garlic, and ginger. (If you add other raw veggies add in here as well.)

  2. Continually toss and cook for 3-5 minutes on medium heat.

  3. Next add in broth and water.

  4. Stir and add in chinese noodles.

  5. Sprinkle in spices and let cook for a few minutes until the noodles are soft.

  6. Add in your additional seasonings and toppings. Serve hot!

Directions:

  1. Turn the instant pot on SAUTE. Add 1-2 TB. olive oil, the onions, garlic, ginger, and minced carrots. Saute until the the onions are translucent, about 2-3 minutes.

  2. Add the rest of the ingredients into the Instant pot and set to MANUAL. Cook for 2 minutes. Release steam when done.

I enjoyed this comfort food all by myself...Imagine that. One child asleep, and the other staring/glaring at me from time out.

Diva Adventures: Utah

I guess you could call us 'moochers', since we've always relied on grandparents to go on family getaways and vacations, but for the first time we ventured out just us four. I wish we would have done this sooner, but with student life and school loans, we haven't had the opportunity to do so. Luckily, everything worked out perfectly for our little family to take this trip, and it was exactly what we needed. We didn't go anywhere exotic (well, to some it might be), just to the beautiful state of Utah. We haven't been in years, and I was dying to see grass. (It's against the religion of Las Vegas to have grass I think?) I've never felt more like a family than I did on this trip. I still feel happy thinking about the memories we created.

We visited my grandparents grave first thing, and it was a beautiful start to the trip. It really put things into perspective for me. I couldn't help but think how happy my grandparents were to see their two great granddaughters running around and reading the names on their grave site. I know they would have loved my babies more than anything!

The next day was July 4th, and boy does Utah love to celebrate. We attending the provo parade, and then sat under the stars on a large blanket in Pleasant Grove, Utah. We knew no one, but had so much fun cuddling, tickling, and laughing on that blanket as we waited for the fireworks.

On Saturday we went to Salt Lake City where we toured Temple Square. There are so many fabulous things about temple square that I love, especially all of the flowers, grass, and trees. (Again, non existent in Las Vegas.) We watched a movie, read stories, viewed beautiful buildings, and ate ice cream. Then we walked across the street to the mall and went to the Disney store. (There was some bribing that happened in order for that stop...)

I can't say it enough...I loved every second of this weekend. Every day home life is special in it's own way, but going out and doing things as a family, and enjoying each others company is completely different. I treasure these moments and I hope in 15 years my girls still consider my their best friend. (And my husband too!)

Oh, and seriously...I LOVE grass.

Mexican Style Salad Naan Pizza

Often times I try and make dinners that can please the whole family, and everyone will enjoy. That's in a perfect world though...In reality, my husband wants Del Taco, one daughter is screaming for a popsicle, and the other is eating crumbs off the kitchen floor...And I just want to make peanut butter and honey sandwiches for everyone and tell them to suck it up. (And then I'll go out and have myself a nice dinner.)

Nothing's worse than making this huge dinner to have one person try it, and the rest of the family dabble at it. So glad I spent 45 minutes making dinner for everyone to not eat it.

I've learned that effort is good when making dinner, but going all out crazy just isn't worth it. No matter how many sauces, dips, spreads, spices, and methods I used making that dinner, there is a chance that 50% will eat only a few bites. And then I feel bummed because all the work I put into dinner, so I finish off everyones plate to make up for it.

It's not pretty.

So when it comes to dinner, I try and think simple. I remember that I have two kids under 3, and a husband that has the flavor palate of a 15 year old. I also usually try to stick with dishes that can easily be adapted for my kiddos. That means that I can take different parts of that dish and serve them separately to my one year old. For example, this pizza.

I made it so I can serve her the chicken separately, along with the corn, and I can make a quesadilla out of the rest of the ingredients.

The sauce is so easy that it took 2 minutes to make, just the way I like it! It's vibrant and green due to the cilantro and avocado, which goes perfectly for a mexican style pizza! I also added this in my girls quesadillas!

Let's not forget about the "crust" in this pizza. It's garlic naan bread, which just took a few hours off my dinner prep. On days where I don't have the will or time to make homemade dough, naan bread is the perfect sub. It's fluffy and flavorful, and when you broil it in the oven it has a nice little crunch just like pizza dough would!

Then there is my husband and I who have completely two different food preferences. So for my pizza, I opted for no cheese to keep it a little lighter.

But for my husbands pizza, I added a little bit more chicken, lots or cheese, and a few dashes of hot sauce!

After the pizzas are baked, I drizzled cold plain greek yogurt on top, which brings it all together!

Mexican Salad Naan Pizza

Ingredients

  • For the Pizza
  • Garlic Naan Bread
  • Avocado Cilantro Sauce(Recipe to follow)
  • romain lettuce
  • Cooked chicken
  • corn
  • tomatoes
  • peppers
  • cheese
  • plain greek yogurt
  • hot sauce
  • (For the Avocado Cilantro Sauce)
  • 2 small avocados
  • 2 small limes (juice)
  • 1 small bunch cilantro
  • 1/4 c. chopped white onion
  • 1-2 gloves garlic chopped
  • 1/2 tsp. cumin
  • salt/pepper

Instructions

  1. Make the dressing by combining all of the ingredients into a blender, and blending until creamy. Adjust salt/pepper to preferred taste.
  2. To make the pizza, get the naan bread. Spread the sauce on top of the bread.
  3. Then top with chopped romain, corn, diced tomatoes, diced peppers, cooked chicken, and if desired, cheese.
  4. Turn the oven on HI broil, and cook pizza for about 5 or so minutes, until the naan bread is a little crisp and the cheese is melted.
  5. Drizzle with greek yogurt.
  6. Enjoy!

Diva Adventures: Frijoles Grilled Tacos, Las Vegas

It's been a while since I've shared a visit to a restaurant here on the blog! What's even more sad is that I live in Las Vegas where tons of people visit often, and there are amazing restaurants galore! But...I have two little kids and no babysitter... And if we aren't out of a restaurant within 20 minutes, well...It gets dangerous.

That being said, our little family LOVES eating out. Ironic? No..More like, I just cleaned the kitchen and it would be really nice for it to stay clean for at least an hour...

Majority of the time when we eat out, we chose Mexican. No, every time we eat out we chose Mexican. I go through salsa like I drink water, and my husband could eat burritos every day for lunch.

Correction. I think he does.

So when our good friends opened a Mexican Grilled Tacos Restaurant called Frijoles, there was no doubt in our minds that we had to check it out.

After eating there more than I'd like to admit, I knew I had to share this amazing find with all of you! Being a healthy lifestyle blog, I totally consider this something that is right up my alley. All the food and drinks are fresh, made right in front of you! There are meat and vegetarian options and...FOR CRYING OUT LOUD THEY HAVE THE MOST DELICIOUS SPINACH DRINK.

If I'm correct, this drink was made with lime, spinach, and oranges. Dang It!...Now I'm craving it. I've also had their CHIA SEED lemonade, which was the perfect balance of sweetness and tangy-ness! But don't worry, if those drinks don't float your boat, there are a ton of fresh drinks right up front for you to sample and chose from!

We usually get my girls rice and quesadillas and then cause a huge rice bomb all over the floor. (But that's ok, we know the owners so they totally are ok with that :)! )

Rice is probably one of my favorite carbs besides sour dough bread, and this one fits the bill perfectly!

The salsa is fresh and somewhat chunky, just the way I prefer my salsa! And my husband...(Only he's not chunky, so that jokes not even funny.)

Now here is where things are going to get intense...

This corn. I swear I make "MMMmmmm" noises every time I take a bite. I've had my share of grilled corn, but this one is just different! I swear they sprinkle magic (yes that's right) on them or something, because this corn is incredibly addicting! It has the perfect char from the grill, the right amount of sweetness from the corn, a little spice, and the cojita cheese brings it all together!

Ahhh...The grilled tacos. I've never strayed, and i've always gotten the grilled chicken tacos and never once been disappointed. It's made with corn tortillas, seasoned and grilled chicken, amazing FRIJOLES (beans), salsa, guacamole, cheese, and sour cream. I usually skip the cheese and just get a little sour cream since I usually ate my weight in salsa, corn, and spinach juice. Just trying to balance things out...

My husband get's something different every time, and this last time he got a grilled shrimp burrito. I know this picture is horrible, but it was either this picture or one of him shoving the burrito in his mouth. I'm assuming he was very pleased :)!

Strawberry Mint Iced Green Tea

The very first time I tasted an iced tea was a few months ago. True story. I always thought it was weird when people ordered iced tea, because like...It's cold tea. Tea is gross. It taste like watered down leaves. No matter how much honey you add to that tea, it doesn't make it sweeter.However, the only thing that will make it sweet is straight up 6 Tablespoons of sugar...

Or so I thought.

If your new to this blog, then I must come out and warn you that I suffer from chronic sugar cravings. Not sure if this is a real disorder, but I think about eating chocolate cake after every meal. With that being said, I try and drink my weight in water to control those cravings. Does it work?

Sometimes.

But an ice cold glass of water would really help that piece of chocolate cake go down a little easier.

So you see, I've been a huge supporter of drinking water. In the past few months though, I've become bored with it. I honestly blame our ice machine, because it has this disability where it can't make crushed ice. The machine says it's on crushed ice mode, but clearly it's confused. It's really put a damper on my water drinking habits.

And now that summer has finally approached Las Vegas, I can see myself getting pretty thirsty every 5 minutes.

(I promise this story is going somewhere.)

That's when I was introduced to iced tea. I admit that this sounds weird because I'm basically saying, "OMG guys! There's this new drink out! Have you heard of ICED TEA?!" I promise I'll try and keep up more...

I loved how it was cold, refreshing, and had a hint of flavor and sweetness.  

Now, the best thing about this recipe is that it's pretty versatile. You can try different herbal teas, different fruits, add citrus, ginger, cucumber, etc. You can leave it in the fridge to have on hand, or it works great for holiday BBQ's and having friends over! I usually let the add ins sit in the tea overnight, and the next day I take them out.

Dare I say I'm about to start a new trend called "Iced Tea?" Think about it my friends...It could get popular.

Strawberry Mint Iced Green Tea

Ingredients

  • 5 Green Tea Bags-Mine had a hint of orange in it
  • water
  • 1/4 c. raw honey- or another preferred sweetener
  • strawberries-handful
  • handful of mint leaves, ripped into medium pieces

Instructions

  1. Fill a small pot with water. Add in the honey. (If using another sweetener like stevia, just add that in at the end.)
  2. Bring the pot to a boil over the stove.
  3. Remove from heat, add the tea bags, and cover. Let the tea sit for at least 15-20 minutes.
  4. Remove the tea bags and add the tea to a pitcher. Add cold water to the pitcher. Fill up 3/4 of the way full.
  5. Add in diced strawberries and ripped mint leaves. Stir until combined. The amount of water, strawberries, and mint will depend on the size of your pitcher.
  6. Put the pitcher in the fridge and let it set for at least an hour so the flavors come together. Serve over a lot of crushed ice. Others can sweeten the tea more if desired.
