It all started with not being able to open up a jar of coconut oil...
It was 4 in the afternoon and my husband was going to be home in a few hours. I really really wanted to make him THESE bars, healthified a little, since he's been studying for hours on end for a huge licensing test.
I was going off of 3 hours of sleep because one child has an ear infection, and the other well..who the freak knows why she still doesn't sleep.
Life was stressful.
So why not add to it and make a huge mess in the kitchen...
In all reality the bars weren't going to be for him, but in some twisted way for me. It was the shopping for shoes and clothes therapy that I couldn't afford, and I figured eating sugar would be the only solution to my problem...
Skip and jump forward to opening the jar of coconut oil and lo and behold it just wouldn't budge. I heated it, twisted it, swore at it, then finally gave up. I scrambled to find a replacement fat for the bars, and figured a banana would do. Then as I searched my cupboards for flour, of coarse they were bare as a baby's bum...(wrong analogy?)
At this point Sweet Pea was awake, Boo was singing about boogers and turkey, and I'd had enough.
So I did what I knew best and made these bars really healthy, and non appealing what so ever to my husband...
I guess you could call these Chocolate Chip Bars.... :)
*These are not overly sweet bars like a true cookie dough bar would taste like. It's merely giving you the pleasure of eating a dessert, without adding an inch to your waist...and it solves all your problems too! :)*
1 c. cooked chickpeas
1 banana-super duper ripe
1/3 c. oats
1/2 tsp. baking powder
1/4 tsp. baking soda
dash of salt
dash of cinnamon
1 tsp. vanilla
1/3 c. mini chocolate chips
Optional-you could sweeten with a TB or 2 of liquid sweetener, or a few drops of stevia...
1. Throw everything besides chocolate chips into a blender. Blend until creamy, then fold in chocolate chips. Spread evenly in an 8x8 greased pan and bake for about 20 minutes. If you want them gooey, bake less.
Top with PB, banana ice cream, or make a cookie dough bar sandwich...
You must know that I didn't even mention these bars to my husband because I just wanted them all to myself. Or I ate them all by myself...
Actually I shared one with Boo.
And then she took like a 3 hour nap afterwards.
